CHAMPARAN KI RASOI, KASBA, KOLKATA
Champaran ki Rasoi is widely known for their unique mouth-watering chicken, mutton as well as vegetarian food preparations. One of the most remarkable preparation is the Ahuna. Gawa Ghee, in place of regular mustard or white oil, is used in preparation of Ahuna. Desi Murg Ahuna is prepared in an earthen pot sealed and fully covered with charcoal. Raw chicken pieces along with whole garlic, ginger, onion and various North Indian in-house spices are put in together and cooked for a stipulated time in that pot. It oozes with a divine aroma of chicken swathed in garlic and the innumerous flavours of North Bihar. Since the garlic cloves are cooked intact, thus giving a special taste to it. Every mouthful of this dish bursts with piquancy.
The Mutton Ahuna is prepared the same way, but with mutton instead of chicken. The consistency of the spices and aroma is the same.
A vegetarian delicacy is the Ghee litti-chokha. Litti is a a rustic and traditional dish of stuffed whole wheat dough balls, where the stuffing is a spiced mix of roasted gram flour or sattu, originated in Bihar and Jharkhand. A whole wheat or sattu dough is made and cooked. The Chokha is a mashed relish served along with the litti. Types available are roasted eggplant (baingan), boiled or roasted potatoes (aloo) and roasted tomatoes (tamatar). Litti is usually roasted on hot charcoal or dried cow dung fire. This is the traditional method of roasting litti, thus giving a unique taste to the littis.
Although the dishes are impeccable, the space and the seating arrangement is inadequate. A few more vegetarian delicacies must be added, for the vegetarians might face a lack of choices in the menu while choosing. Furthermore, they also make all the items in less numbers and quantities. Thus, one must visit early in order to purchase their desired dish. Usually all the dishes are sold out between 12noon to 1pm.
